Distiller: Copenhagen Distillery
Henrik Brinks is the owner and master distiller of the recent born micro-distillery, located in the Copenhagen neighborhood and built in a wonderful building of 1749, originally a beer industry. Unused for many years, this building came back to life thanks to the resourcefulness of Henrik, a real craftman who projected and installed a steel pot of 25 liters.
Instead of using the cereals distillate, Copenhagen Distillery uses a hydromel distillate and only one plant, juniper. A propolis distillate, dissolved in alcohol is added later.
It’s a unique gin, very peculiar for the taste and consistency, with a predominant note of flower and honey.
