Distiller: Kyoto Distillery
KI NO BI Kyoto Dry Gin is inspired from tradition and bottled in Kyoto, Japan.
Alex Davies, master distiller with previous experience at Cotswolds Distillery, wanted to create a gin using the centenary art of blending. Together with David Croll and Marcin Miller he then created a product of highest quality and completely innovative: the first Japanese gin.
The botanicals are divided into six categories: base, citrus, tea, herbs, spices and flowers. They are all separately distilled and later put together.
KI NO BI Kyoto Dry Gin is created with Japanese botanicals such as yellow yuzu from the north of Kyoto Prefecture, hinoki wood chips (Japanese cypress), bamboo, gyokuro tea from the Uji region and green sanshō (Japanese peppercorn) berries.
