Distiller: Ransom Spirits
The Old Tom Gin by Ransom Spirits is a revisiting of the most famous gin in America during the second half of the 19th century, the golden age of the American cocktails, in the pre-prohibition phase.
Its thin malt is the result of using a malted barley must, combined with an infusion of botanical ingredients in high strength corn alcohol. The final distillation is passed through a still to preserve the maximum quantity of aromas and body. Only the "heart of hearts" (the best part of the distillate) is preserved for this special artisan gin.
The Ransom Spirits Company was founded by Tad Seestedt in 1997, in a small farm in Oregon where, in 2011, the certification for organic production of their ingredients was obtained: mash and fermentation are carried out weekly in small batches , starting from organic cereals grown by local producers. The production takes place in small French copper stills with direct heat, with cutting heads and tails made without the use of mechanical tools.
