Capreolus Quince Eau De Vie 2018. The hand-harvested quince is washed individually to remove the layer of fluff rich in essential oils that makes it impossible to distill this fruit. A slow and long fermentation is necessary to capture the delicate essence of the quince. After a month of fermentation, the fruit must is distilled three times for a final yield of one liter per 25 kg of fruit.
This quince distillate is made according to traditional distillation techniques, using the most authentic raw material. Impossible to not try them.
