Distiller: Clairin, The Spirit of Haiti
Type: Rhum Agricole
Clairin, The Spirit of Haiti, are the rhum of Haiti: at the forefront of the world, none before Velier had discovered these artisanal and artistic productions, some tiny, widespread in the territory of this uncultivated island.
Varieties of cane originating, not hybridized, no chemistry in agriculture, spontaneous fermentations without selected yeasts, old methods of distillation without filtration. All this for the creation of Rhum Agricole unique in the world.
Three types of sugar cane have given their juice to the syrup and make the rum Clairin La Rocher Haiti a rarity. The raw material was distilled in the traditional way, discontinuous in a copper alembic. Thus, it is possible to taste a relatively high alcohol content, since it has been bottled with the natural distillation strength without adding water. In fact, it is more comparable to Rum Overproof than to Cask Strength Rum because it has not been stored in a wooden barrel.
