It is right there, on the Sierra Mazateca in the state of Oaxaca, that the Master Distiller Jose Luis Carrera produces his sugar cane aguardiente. In addition to fruit and four varieties of heirloom coffee, Jose Luis cultivates four different types of sugar cane on his 14 hectares: Caña Dulce, Caña Morada / Negra, Caña Dura and Caña Amarilla / Criolla.


His lots of aguardiente are made mostly from Caña Criolla, but inevitably they have a mixture of different types of cane. Paranubes is distilled from pure fresh sugar cane juice from pesticide and fertilizer-free agriculture whose fermentation is spontaneous and natural. This rum is bottled to the degree of still, does not undergo dilutions and is created by Jose Luis with the same passion and tradition that his father and grandfather taught him over the years.
Distillates have different alcoholpercentages. So, we have defined a parameter allowing you to better understand and compare different prices. This parameter is calculated by dividing the bottle price by the alcohol content. The alcohol content (or strength) is the amount of pure alcohol (ethanol) contained in the distillate.
This parameter indicates the price of a single 4cl dosage of distillate. It is calculated by dividing the price of the bottle by its quantity (expressed in cl), then multiplying by the centilitres of the recommended single dose, as average in cocktail recipes.
