Sotol

The so-called desert spoon, or Dasylirion wheeleri (in Spanish Sotol), is the plant that grows in the wild areas of northern Mexico and Texas, from which the little-known Mexican distillate Sotol is derived, similar to Mezcal as productive process.
Unlike the agave, which blooms only once in its life, the Dasylirion wheeleri produces a new flower stem after a few years and requires an additional 15 to reach full maturity and from a single plant it is possible to obtain a single bottle. The plant typically grows on rocky slopes in the prairies of the Chihuahua desert, between about 1,000 and 2,200 meters above sea level.
