Distiller: Cesar Florido
Cesar Florido is the owner and factotum of Cesar Florido, in business since 1887, and in the fifth generation.
He owns 21 hectares, planted with palomino in the Pagos of Balbàna and Miraflores, and some hectares in Chipiona, on sandy soil, cultivated with Muscat of Alexandria for the production of Moscatel. It is the only bodegas left to carry out all the stages of sherry production, from the vineyard to bottling. He cultivates grapes, vinifies them with natural yeasts, fortifies and ages in his solera, located in three bodegas, in the heart of Chipiona, a few meters from the Atlantic Ocean.
Its Moscatel Dorado is fortified with the traditional "mistella" obtained with a concentrate of overripe grapes.
It goes well with an aperitif, as well as desserts, hard and aged cheeses, cold cuts.
