Winestillery is a Winery and together an independent artisan Distillery , in short, it is the first and only Vinstilleria in the world , in which wine is enhanced through products not classically 'Tuscan' such as Gin, Vodka, Vermouth. In fact, few things like wine manage to represent so clearly the relationship that exists between hard human work and the generosity of the fruits of the earth, as well as between the charm of tradition and the constant challenge of innovation.
Winestillery it is a radical project, brought to life by the relationship between a profound enological knowledge and the art of distillation.
The company's Master Distiller is Enrico Chioccioli Altadonna , who abandoned his career as a lawyer to pursue his passion for distillation. After a first experience in a Bourbon distillery in Brooklyn, Enrico studied distillation and enology at the Cerletti Enological School in Conegliano and the University of Bordeaux, drawing the knowledge and experience necessary to create Winestillery , which also sees the participation of his brother Niccolò, Wine Production Manager.
Each product of Winestillery is made in small batches in the Gaiole in Chianti distillery thanks to Bacchus , the copper alembic Pot Still of 500 liters specially created by the Tuscan company Frilli. Bacchus has been designed to distill both according to the Bennet method and with the Carter Head, in order to enhance the quality of the raw material in every nuance to the maximum. Each product is strictly natural , not added or corrected in any way, so as to maintain the maximum expression of purity.
The Gin range includes five versions: London Dry Gin , in which the wine distillate produced by Winestillery joins the great botanical heritage of Chianti in a second distillation in Pot Still, creating a distillate capable of transporting to the heart of Tuscany. The Old Tom , an innovative gin that nevertheless retains the elegant style of tradition, and which rests briefly in French oak barrels that contained the wine. A series of limited and out of the ordinary productions that takes the name of Sinesthética, and which includes the Copper Strength and the Slow : these are two limited releases that want to unite worlds that have always been distant from each other, to give life to new products and new taste experiences. Finally, Hyper Low Gin , that is to say an extraordinarily intense Gin Elixir, obtained through a secret distillation technique, full proof and not cold filtered: just a few drops to get the deeper soul of gin. Hyper Low aims to accompany the no-alcohol cocktail revolution in Italy and around the world.
Tuscan Bitter is a 100% natural, intriguing and extraordinarily balanced product, which is obtained from the infusion of natural botanicals from Tuscany in wine alcohol. The notes of gentian, rhubarb and cinchona are prevalent on a citrus background.
The range of Vermouth includes the iconically Tuscan Tuscan Vermouth , which is inspired by the most ancient flavors and combines the careful selection of fine wines with the best local botanicals. Strictly without caramel or dyes of any kind. The dry version is Vermouth Dry Toscano , and comes from Trebbiano grapes harvested at full ripeness and from late harvest grapes, infused with local botanicals. Very intense and authentic, it has delicate notes of white flowers, lively notes of yellow pulp fruit and aromas of medicinal herbs.
Finally, the Vodka. The intent is to recreate a Vodka ante litteram with the same characteristics as that which spread in the 14th century to the Russian court of the Tsars. The starting point is the Chianti wine which, after a first distillation up to 95% vol., Is redistilled a second time in the Pot Still alembic, so as to be able to give it greater roundness and finesse. The result is a unique Premium Vodka, strongly linked to Tuscany.
