Enmore 1991 31 Y.O. is a rum with a great history behind it.
Distilled in 1991, it is the child of a special and now rare - only two examples exist - type of Versailles wooden still, the Demerara Vat Still.
This still, now located at the Diamond Distillery, took its name from the distillery of the same name on the west bank of the Demerara River in Guyana. After playing a leading role in the country's rum history, the plant closed in the 1970s following the privatisation of sugar cane plantations.
It was thus transferred first to Enmore, then to Uitvlugt in 1993 and finally to where it is currently located in 2000.
The Enmore 1991 31 Y.O. was then distilled at Enmore, prior to closure, in this special 250+ year old wooden still, resulting in a unique Rum. The distillate spent 31 years in cask #68. It was bottled in 2022 by Precious Liquors & Whisky Paris.
Dark amber red in colour, it brings to the nose hints of ripe fruit, tyres, varnish, tobacco, petrol. The palate is tannic, rich in spices, coffee, brine. The pungent component reminiscent of hydrocarbon and resin prevails. The finish is long, sharp, hard, woody.

Distillates have different alcoholpercentages. So, we have defined a parameter allowing you to better understand and compare different prices. This parameter is calculated by dividing the bottle price by the alcohol content. The alcohol content (or strength) is the amount of pure alcohol (ethanol) contained in the distillate.
This parameter indicates the price of a single 4cl dosage of distillate. It is calculated by dividing the price of the bottle by its quantity (expressed in cl), then multiplying by the centilitres of the recommended single dose, as average in cocktail recipes.
