In 2005 a first still pot arrived in Marie-Galante and was installed at Bielle distilleries. In 2007 a second one was made. Those two Mler pot stills, 300 and 1200 liters capacity, are heated with a double boiler. The fresh sugar cane juice is slowly fermented in steel cuvees, with thermal control. Then the liquid is distilled by Master Vittorio Gianni Capovilla. The reduction to 56% is made with water from the sky. The best Rum Agricole of the world is produced in this way.
Nose: wide and aerial. The sugar cane is present with delicacy, bringing its aromatic palette. White fruits (peach, pear), red berries (raspberry, cherries in alcohol), exotic (pineapple, passion fruits) and more interesting notes like light tar, leather, tobacco, are melting with dry fish, hay and fresh ginger, for a seductive and sensual mix.
Mouth: rich and generous, has fruits and almonds flavors which reminds Kirsch from Fougerolles. Some of the spices (star anise, cloves, and cinnamon) can be tasted in the middle of the mouth. It changes then to citrus (grapefruit, bergamot) and white flowers (lilac, thrush). Vanilla changes from gingerbread to dried fruits (pistachio, almonds).
Aftertaste: long and oily. Fruits turns into candy, and a part of it even to jam (cherry, strawberry). Geranium flowers and rose petals wrap the mineral notes (pencil lead, petrol). The empty glass remains with apricot core and star anise.
