Don Papa is a premium rum from the Philippines that is produced on the island of Negros, from an extraordinary and highly renowned sugar cane that grows at the foot of the Kanlaon volcano. It is no coincidence that the island is nicknamed 'Sugarlandia'.
Its birth is due to the intuition of Stephen Carroll, a former executive of Rémy Cointreau, who during a holiday fell in love with the Hacienda Santa Rosalia, in the Negros Occidental area - from where the molasses used would later come. In his project, Carroll involved his friend Andrew Garcia, with whom he created the Don Papa brand in 2011.
The name is a tribute to Dionisio Magbuelas, known as Papa Isio, sugarcane gatherer, shaman and leader of the Philippine revolution against Spanish rule in the 19th century. Strong, visionary and tied to his land, Papa Isio perfectly represents the spirit of the brand: independent, with a strong personality, rooted in his origins but open to the world.


The company is actively involved in the development and protection of Philippine territory, and therefore works with the Talarak Foundation and the Philippine Reef and Rainforest Conservation Foundation to promote the biodiversity of the Western Visayans. It has promoted the union of local farmers in the Hacienda Crafts Company, with the aim of improving their working conditions, and promotes gender equality with 66% women in the workforce.

Don Papa's production combines local knowledge and modern distillation techniques.
The sugar cane from the volcanic soils of Mount Kanlaon is harvested after about a year, when it has reached a height of three metres. This yields the famous Black Gold molasses, which after fermentation is distilled in column stills for a clean, aromatic profile.
Ageing takes place in American ex-bourbon oak barrels in the island's hot and humid climate, which accelerates the interaction between wood and distillate. The result is a very smooth rum, in which hints of vanilla and sweet spices often prevail.
Don Papa can be drunk neat at room temperature or on the rocks, especially for those who prefer sweet rums. It is also excellent in blending, for cocktails with aromatic and fruity profiles.
Distillates have different alcoholpercentages. So, we have defined a parameter allowing you to better understand and compare different prices. This parameter is calculated by dividing the bottle price by the alcohol content. The alcohol content (or strength) is the amount of pure alcohol (ethanol) contained in the distillate.
This parameter indicates the price of a single 4cl dosage of distillate. It is calculated by dividing the price of the bottle by its quantity (expressed in cl), then multiplying by the centilitres of the recommended single dose, as average in cocktail recipes.
