Made from local sugar cane according to the strictest traditions, Bayou White is distilled in single pass in the distillery's two pot stills.
The cane is produced locally and the molasses used come from local producers. These include M.A. Patout, the oldest sugar producer in the United States (1829). The fine molasses are mixed with cane juice to start fermentation, which is activated by selected yeasts in the distillery. Fermentation takes 28 to 30 hours.
For Bayou White there is no ageing, only resting in steel vats before bottling.

This parameter is calculated by dividing the bottle price by the alcohol content. The alcohol content (or strength) is the amount of pure alcohol (ethanol) contained in the distillate.
This parameter indicates the price of a single 4cl dosage of distillate. It is calculated by dividing the price of the bottle by its quantity (expressed in cl), then multiplying by the centilitres of the recommended single dose, as average in cocktail recipes.
