The 1136 pages of these two large-format volumes are the result of five years of full-time research by the author, Steffen Mayer. The history of Trinidad and its sugar joins that of the Caroni distillery, which closed its doors in 2002 but which has continued to be talked about. Large sections are also dedicated to the fermentation and distillation processes, and to the original bottling, before and after closure.
