On the southern coast of Grenada, protected from the prevailing winds of the Atlantic coast, is Old Bacolet, the first area of the island to be cultivated by the French. Here in a plain located between two small rivers, with mainly alluvial soil, the sugar cane variety Cain grows. This fast growing type of cane is found in the Terroir plot called Riverside.
The distillation is carried out in Forsyths' Pot Still alembic.
