The 2011 Capovilla Clos Saint-Hilaire Billecart eau-de-vie is produced from the marc of Pinot Noir grapes harvested in the Clos St Hilaire vineyard of Domaine Billecart-Salmon - about one hectare in total, worked on horseback.
It is distilled twice in a bain-marie, in a slow process that, combined with Maestro Capovilla's care in selecting the best pomace, allows this spirit to maintain the smoothness of the red grapes, while preserving the elegance of the Pinot Noir of Champagne.
