Vittorio Gianni Capovilla is widely recognized as one of the best distillers in the world.
Possessed by an irrational passion for fruit, this old mechanic started the search of the rarest and surprising varieties through the Alps, in France and Romania. Real technician at the service of Nature, since 1976, through a large number of patents by him deposited, both for distillation, conservation and reduction before bottling, he has been trying to extract the quintessence of fruit and peels.
For ten years Gianni exercised in fruit distillation, then in 1986 decided to open his own distillery in Ros Veneto region. Besides his aquavit made with Vesuvius Mountain apricots, is distilling Pears Williams, black cherries, peaches from the vineyard, wild cherries, wild blackberries and currants.
Just as an explaining example: to obtain a 50 cl bottle of his wild cherries distillate, the best in the world, he uses around 30,000 cherries.
Tasting Notes
Nose: wide and complex, with apricots in all its stages: ripe, in a jam, as a cake. The quality of this fruit is simply exceptional. Mineral (lava, manganese) evocating embers. With spots of sweet spices, the fragrance is reduced by apricot coulis and exotic fruit (mango, guava) and green liquorice.
Mouth: firm and tender at the same time, behind its tannin you can crunch the apricot. Herbal, with a lot of freshness like in a luxuriant nature. Half of the taste is floral (peony, freesia) with slight dirt scents. Taste turns into saffron and black liquorice notes but always with fruit (apricot, peach with apricots scents) very present.
Aftertaste: long and rough, brings back in a sublime way the ripe apricots, but in the same time still has citrus (bergamot, verdello lemon). Made in the hardest steel, its mineral flavor is not forgotten, but keeps growing in concentration. The aftertaste reminds a fruit yogurt, certainly apricot but also strawberry and gooseberry.
Distillates have different alcoholpercentages. So, we have defined a parameter allowing you to better understand and compare different prices. This parameter is calculated by dividing the bottle price by the alcohol content. The alcohol content (or strength) is the amount of pure alcohol (ethanol) contained in the distillate.
This parameter indicates the price of a single 4cl dosage of distillate. It is calculated by dividing the price of the bottle by its quantity (expressed in cl), then multiplying by the centilitres of the recommended single dose, as average in cocktail recipes.
