Commonly you hear a lot about coffee variety and different terroirs but almost never we know about the different methods of beans' production, which is a big fault, since the processing system can greatly influence the flavors.
To transform the coffee just harvested into a product ready for roasting (commercial coffee) there are two different methods: the first, washed with humidity (W) and the second, naturally dried (N). Depending on the way of treatment, the same coffee quality will result with very different flavors.
In order to decide well how much the different methods of processing can affect the same variety, even grown in the same terroir, Claudio suggests the Grani experience, where in every small box there is a single variety of Arabic coffee (Caturra CAT, bourbon BB and novo mundo NM) covered with the same 55% chocolate and with the processing method (W or/and N) indicated on the box.
