Clairin Vieux Sajous 4 years old: evolution of rum
It is the first Clairin to become a full-fledged Rum, surpassing 4 years of age, thus losing the primary characteristics of Michel Sajous' Clairin, to be enriched with a new flavor profile typical of aged rums.
Vieux Sajous 4 Y.O. Second Release is the result of a blend of 12 Ex-Caroni and Ex-Single Malt Scotch Whisky barrels aged for 4 years, and enhances the evolution that has taken place from the primary fragrances of Clairin to an aromatic complexity given by the esterification process. The sugar cane used is the Cristalline; fermentation starts spontaneously with indigenous yeasts.
